My husband lost 50 pounds last year. I started making this recipe so he could enjoy a sweet treat without the carb overload. He himself took on the task of baking them, and we always have a batch on hand. He likes them cold so their home is in the refrigerator.
I adapted the recipe from The Big Man’s World “Keto Chocolate Chip Cookies” which you can easily google.
My version:
- 1 cup almond butter
- 1/2 cup allulose
- 1/4 cup ground flaxseeds
- 1/2 cup Ghiradelli 72% cocoa chocolate chips
- 1 egg
- 1 tsp. vanilla
- 1/4 tsp. baking soda
Mix everything together and bake for 8 minutes.
I’m pretty sure my husband sneaks in a FEW extra chocolate chips…
