Who doesn’t love pizza? It’s the classic comfort food. But the combination of carbs and saturated fats in a traditional pizza can cause a blood sugar “rollercoaster”.
We have reimagined pizza night, and it’s my favorite dinner of the week now!
This recipe is adapted from the one in Dr. Heather Sandison’s book entitled Reversing Alzheimer’s. The leftovers keep well.
Ingredients
- 1 12 ounce bag frozen riced cauliflower
- 1 egg
- 8 oz. Montchevre Goat Cheddar cheese (or mozzarella if you prefer)
- 1 tsp. dried oregano
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- favorite pizza toppings (tomato sauce, mushrooms, peppers, onions, olives, pepperoni, etc.)
Preheat the oven to 425 degrees. Line a pizza pan with parchment paper.
In a glass bowl, microwave the cauliflower for 5 minutes. When it is cool, place it on a clean kitchen towel and squeeze out as much moisture as possible. Return it to the glass bowl and add the egg, oregano, garlic powder, salt, pepper, and 1 cup of shredded cheese. Mix well.
Place the cauliflower mixture on the prepared pan. With a fork, spread it into a circle of about 1/4 inch thick. Bake in the preheated oven 15 to 20 minutes until golden brown and starting to crisp.
Remove the crust from the oven. Add your toppings, including the rest of the cheese.
Bake again for 10 or 12 minutes, until cheese is melted and ingredients are heated through.
Let the pizza cool for a few minutes before slicing.
