When I know I’ll be away from home at lunchtime, I pack a lunchbox, just like when I was a kid going to school. I take nuts, raw vegetables (whatever I have – carrots, peppers, grape tomatoes, cucumbers, etc.), and an IQ Bar for dessert.
A little boring perhaps, so I’m excited about a new option I just figured out: fresh guacamole! One avocado, smashed with a bit of lemon, salt and pepper, fit nicely into this little silicone container I gave myself for Christmas. The lemon and the pit preserved it perfectly. I ate it with a spoon; it was delicious!
An avocado a day keeps the doctor away.
